In ADT, how do I get rid of the existing mapping(from previous clients)?

Answer

Open Windows Explorer. In your ADT folder (usually under C:/Program Files) there will be a file called adt.dat . This contains the current category and tax mapping. You can rename this file(eg. old.dat). Then when you use ADT there will be no existing mapping. When you have done the mapping for that client and converted the data, the program will have created a new adt.dat file. You could rename this to clientname.dat . When ever you want to use an existing mapping, rename that clients dat file to adt.dat.
